Shortbread Cookie Recipe With Icing Sugar

I prefer using a shortbread cookie recipe with icing sugar as the icing sugar helps with the delicate nature of shortbread creation.  This recipe will create just over 40 cookies (if you do the ball version using a tablespoon of dough).

There are two things to note with this recipe:

1. There are three optional ingredients, so feel free to test this recipe with out without them.
2. You can keep them plain, or create an indentation in the middle of the cookie, which will allow you to create some fantastic decorations (as per the photo above).  I prefer this one due to the delicate structure of the finished cookie.

INGREDIENTS

  • 1 egg yolk
  • 1/2 cup icing sugar (also known as confectioners sugar)
  • 1 cup unsalted butter (225 grams – room temp)
  • 1/2 teaspoon baking powder
  • 2 1/2 cups of flour
  • 1 teaspoon vanilla extract
  • 1/2 cup finely cut walnuts or finely cut almonds (optional)
  • 1 tablespoon brandy (optional)
  • 48 cloves (optional, not sure what they are?  Check Walmart and search for “whole cloves”)
  • extra icing sugar to powder over finished cookie.

INSTRUCTIONS

  1. Preheat the oven to bake, at 350 degrees Fahrenheit.
  2. As mentioned in the ingredients, make sure the butter is room temperature.  You need to beat the butter extremely well, until its fluffy and light in texture. An electric mixer would really help here.
  3. Add the icing sugar and mix together well.
  4. Add the egg yolk, vanilla and the optional brandy and mix until a creamy consistency.
  5. Mix flour, baking powder and optional nuts together in separate bowl.
  6. Combine the flour mixture above to the creamed mixture, stir to mix, which will form a dough.  Knead finished dough lightly.
  7. You now need to chill the dough for 3+ hours.
  8. Once chilled, share the cookies into desired shape.
    • If you are going to use the cloves, then it helps to roll the dough into balls (tablespoon of dough), and then insert a whole clove into each cookie ball.
  9. Bake cookies for 16-20 minutes, at the 16 minute mark check to see if they are light brown, if yes then you are done, or else bake for the extra time.
  10. Once baked, while hot, sift icing sugar over cookies, or roll in icing sugar (if you have round shaped cookies).
  11. If you have made the cookies with the indent, decorate how you like.  I prefer a custard with a few fresh fruits on top.
  12. Once again I remind you that these cookies are delicate so treat with care.
