Banana Bread Sour Cream Recipe

The standard problem with banana bread is that it can get quite dry when baked using traditional methods, which leaves a dilemma on what to do with the inevitable overripe banana!
The solution is simple, the addition of the magic sour cream ingredient. Follow the instructions bellow for our moist and tasty banana bread sour cream recipe.
The prep time takes about 10 minutes, the baking time takes 1 hour.


  • Unsalted Butter ( ½ Cup, can use margarine if you prefer, in my opinion butter provides a tastier result)
  • Sugar (1 cup, I use white however you can substitute with brown)
  • Eggs (2 large)
  • Vanilla (1 teaspoon)
  • Flour (1 ½ cups all purpose)
  • Baking Soda (1 teaspoon)
  • Salt ( ½ teaspoon)
  • Sour Cream (½ cup)
  • Banana (ripe, 1 cup of mashed banana is needed)
  • Walnuts (If you like nuts in your Banana bread, this is 100% optional)
  • Cinnamon ( ½ teaspoon, optional if you find the taste of cinnamon too strong)


  1. Mix the butter (soft, preferably not 100% melted), sugar, eggs and vanilla in a large mixing bowl. Whisk till it becomes a cream like consistency (3-5 minutes worth of mixing).
  2. Add the salt, flour and baking soda and fold into mixture for about a minute. Add the mashed bananas, chopped nuts and sour cream. Mix very well for about 2-3 minutes.
  3. Add finished mixture to a large greased pan for breads, or you can also use muffin baking pans.
  4. Bake at 350 Fahrenheit for 1 hour.
Serving suggestion

  • Use the toothpick test. Poke bread with toothpick, if the batter is still uncooked, the toothpick will contain a thin coating of batter.
  • Let banana bread rest before you slice or serve.
