Easy Nanaimo Bar Recipe

I was always under the impression that this was difficult, that was until I discovered this easy nanaimo bar recipe that makes just over 35 delicious nanaimo bars (depending on the thickness you want).
This is one treat that I have made that just doesn’t last, and it has the convenience of being able to be prepared well before its eaten as the shelf life for this dessert is long, especially if you freeze them and thaw when you want to serve snacks to your guests.

INGREDIENTS (1st layer on bottom)

  • 1 Egg
  • 1/2 cup of butter (unsalted)
  • 5 tablespoons of Cocoa powder
  • 3/4 cup of coconut (finely cut is preferable)
  • 1/4 cup of white sugar
  • 1 3/4 cups of Graham cracker crumbs
  • 1/2 cup of finely chopped walnuts.

INGREDIENTS (middle layer)

  • 1/2 cup of butter (unsalted)
  • 2 tablespoons of vanilla custard powder.
  • 2 cups of icing sugar.
  • 3 tablespoons of milk.

INGREDIENTS (top layer)

  • 2 tablespoons of butter
  • 2/3 cup of semisweet chocolate chips (1 cup if you want a thicker chocolate topping)

INSTRUCTIONS (bottom layer)

  1. Grease  a 9 inch by 9 inch container.
  2. Take butter, sugar and cocoa, combine and melt in large saucepan over medium heat.  Make sure it is well combined before moving onto next step.
  3. Turn heat to low and add the beaten egg into the mixture and still till combined and the mixture thickens.
  4. Remove mixture from heat and add nuts, coconut and Graham crumbs.  Stir to combine all ingredients.
  5. Pour mixture and spread in greased container from step 1.  Compact mixture firmly.

INSTRUCTIONS (middle layer)

  1. Combine the butter (soft) with the milk, custard powder and icing sugar.  Mix very well until everything is combined. (No heat for this section)
  2. Spread over bottom layer.

INSTRUCTIONS (top layer)

  1. Melt chocolate and butter over low heat.
  2. Once melted let it cool (enough for it not to harden)
  3. Pour cool mixture over middle layer.
  4. Refrigerate.
