Quick Chocolate Pudding Recipe

The microwave will take this chocolate pudding recipe and transform it into a quick and delicious pudding. This will take no more than 9 minutes to prepare and takes a total of 6 ingredients to create a dessert that everyone in the family will love.  The ingredients will made 4 cups.
The base is a basic vanilla pudding with chocolate added, so this is truly a pudding that is easily converted from one variation to another.  Remove the chocolate to create the vanilla version, substitute the chocolate with caramel, peanut butter or butterscotch, or just experiment and try a combination of substitutes!

INGREDIENTS

  • 1/2 cup of white sugar.
  • 2 large egg yolks.
  • 2 cups regular milk.
  • 1 teaspoon vanilla extract.
  • 2 tablespoons of cornstarch.
  • 1 cup of semi-sweet chocolate (pieces)

INSTRUCTIONS

  1. Add the sugar and cornstarch to a bowl and mix well.
  2. Whisk in the milk.
  3. Microwave the above mixture on high for 7 1/2 minutes in total, however you need to pause three times during the time.  On each pause whisk the mixture well.  The mixture should be bubbling towards the end of the 7 1/2 minutes.
  4. In a separate bowl slightly beat the egg yolks (remember, just the yolks)
  5. Pour some of the hot milk mixture into the egg mixture and mix quickly.
  6. Now combine rest of milk mixture with the above and mix quickly (everything is now combined)
  7. Microwave the above mixture for 1 minute on high.  Pause at the 30 second mark to whisk, and then whisk again when finished.
  8. Add the chocolate to the mixture and still until melted.
  9. Now pour completed chocolate pudding into serving cups (or bowl), cover with plastic wrap and let it set in the refrigerator.
  10. When you are ready to serve you can garnish/top with a combination of whipped cream, fruit, and/or chocolate shavings.
